New cookbook on 400 Calorie Mains a useful addition to the kitchen

That stalwart of the local publishing scene, Company’s Coming, has a new cookbook for those who struggle to prepare their evening meals to a healthy standard, while still maintaining enough flavour and variety to be satisfying. In 400-Calorie Mains, the publisher has come up with 75 recipes for foods that are impressive and enticing, but also low-calorie. Selections include Dark Mushroom Tenderloin, Mango-stuffed Chicken, and Pineapple Lamb Kabobs with Spiced Yogurt.

The cookbook was developed in the Company’s Coming test kitchen by local chefs Sheridan McLaren and Ashley Billey, as well as the legendary Jean Pare (now 87) who started the company in 1981 after running a successful catering business for 18 years. Food folklorist James Darcy also contributed. The books are available online, as well as where other Company’s Coming publications are found, including selected Chapters and Indigo stores.

If you want to get a sense of the food in the cookbook, chef McLaren will be demonstrating a couple of dishes on CTV News at Noon on Monday, Jan. 26 at 12:50 p.m. and also on BTV on Wednesday, Jan. 28 at 8:30 a.m.
